Ingredients to make Avocado stuffed with plums:
- 20 units of small, red and sour plums
- 2 dessert spoons of licorice sticks
- 1 tablespoon of sugar
- 350 milliliters of syrup
- 2 teaspoons of agar-agar
- 2 units of avocado
- 1 handful of chopped plums
- Mix of greens
- 1 pinch of spiced sea salt
- 1 handful of lemon peel (thin strips)
How to make Prune Stuffed Avocado:
The first step in making this delicious avocado dish is to prepare the plum jelly. To do this, place the fruit in a saucepan and cover with the licorice, sugar and cook over low heat for a few minutes. Licorice can be substituted for another tablespoon of sugar. Make sure the plums don’t fall apart and make sure the juice has turned bright red. Drain and check the taste of the liquid obtained, it should be slightly sweet and very acidic. If it is not very acidic, you can add a little lemon juice. Return the prune juice to the saucepan along with the syrup and agar-agar. Leave in the fire until the latter dissolves completely. Pour into a large and flat previously moistened mound, the idea is to form cookie-shaped pieces with the gelatin. Refrigerate until gelatin sets. Once it has curdled, unmold the plum jelly and cut individual pieces with the help of a pastry cutter. With the gelatin ready, all that remains is to peel and cut the avocados in half. Remove the seed, add a pinch of sea salt and replace with a cooked plum. Sprinkle with a little sugar. Serve the avocados with a couple of pieces of gelatin and decorate with strips of lemon peel.
