Recipe for green salad with escarole and olives

  • ½ endive
  • ½ onion
  • 1 garlic clove
  • 2 tablespoons of breadcrumbs
  • 8 green olives
  • 1 tablespoon of Capers

  • 1 splash of sweet vinegar (not balsamic)
  • 1 jet of olive oil
  • 1 pinch of salt and pepper

How to make Green salad with escarole and olives:

The first step to prepare this delicious fresh salad will be to chop the escarole lettuce into fine strips. Also finely chop the garlic with the onion and put them to macerate in a bowl with vinegar. Wait a few minutes and add the breadcrumbs to the bowl.

Remember that for this to be a vegan recipe you must check that the breadcrumbs you use are also vegan. Now mix the cut escarole with this onion preparation, the pitted olives, the capers and the algae. Stir everything well so that the ingredients are distributed evenly.
