Recipe of Mercian salad with tuna

We present a fresh and very easy to prepare salad, in about 20 minutes it will be finished.  A perfect starter to accompany any main summer dish. It is a humble and simple dish, tasty for the palate. The Mercian salad with tuna can be served as part of a tapas or as a starter in the center of the table. You can accompany it with crusty bread or some hard chopsticks.

Ingredients to make Mercian salad with tuna:

  • 800 grams of canned tomatoes
  • 1 large onion
  • 3 eggs
  • 1 can of canned tuna of 80 gr.
  • 1 handful of black olives
  • 1 dash of Extra Virgin Olive Oil
  • 1 splash of Vinegar

How to make Mercian salad with tuna:

We start by putting a saucepan with water and the eggs. Cook for about 10 minutes until they are ready and the yolk is not overdone or raw when we open them. Once cooked, put them in cold water and let them rest.

Tip: A trick to peel hard-boiled eggs more easily is to add a little vinegar to the water during cooking.

While the eggs are there in the fire, cut the onion into julienne strips. It is possible that the onion has a strong flavor, this can spoil the flavor of the rest of the ingredients in our salad; to do this, and we can put a frying pan over low heat and add the onion, without letting it brown, for just 5 minutes. Once finished, set aside the onion on a plate until it loses a little heat.

A second option, in a deep plate we put cold water with a little salt, let it rest for a few minutes and rinse. So its flavor will be smoother.

We prepare the canned tomatoes, for this we take out each one of them and we cut them into pieces, the size will depend on our tastes, but in small tacos it will be fine. We can use a deep source; add the tomato and part of the liquid. Next, peel the eggs and cut them into slices. We prepare the canned tuna, drain and crumble slightly with a fork. We incorporate all the ingredients that we have already prepared together with the olives and season with the extra virgin olive oil, the vinegar and a pinch of salt to taste.

Mix everything very well, taste the salad and see if we need to add more dressing. To taste, as always. Enjoy the Mercian salad with tuna on a summer day or a family meal. This delicious fresh salad is also ideal to take away and serve it on a day at the beach or a picnic.
