Ingredients to make Potato Salad with Mustard Vinaigrette:

  • 600 grams of Potatoes
  • 2 cans of prickly pear in oil
  • 2 eggs
  • Black olives
  • Green olives
  • 4 dried tomatoes in oil
  • 4 tablespoons of extra virgin olive oil
  • 6 tablespoons of Dijon Mustard
  • 4 tablespoons of American Mustard
  • 2 tablespoons of apple cider vinegar

How to make Potato Salad with Mustard Vinaigrette:

We take a saucepan and put enough water to boil with salt to taste. While it heats up, we take the opportunity to wash the potatoes, since we will cook them with the skin. When the water boils, add the potatoes and let them cook. We remove them when they are ready, drain them and let them cool.

Trick: We choose potatoes of similar sizes so that they cook evenly.

Apart, we cook the eggs in boiling water, remove them when they are ready, drain them and let them cool.
