Ingredients to make Lentil and Cherry Tomato Salad:

  1. 1 pot of cooked lentils (400 g)
  2. 1 can of sweet corn
  3. 250 grams of cherry tomatoes
  4. 1 can of pitted black olives
  5. 1 can of mackerel in oil (70 g approx.)
  6. 1 splash of extra virgin olive oil
  7. 1 splash of Vinegar
  8. 1 pinch of salt
  9. 1 pinch of black pepper
  10. 1 pinch of minced Garlic

How to make Lentil and Cherry Tomato Salad:

  •  The first step before preparing our legume salad is to wash the lentils well to remove the remains of the liquid that preserves them and let them drain.
  • We also drain the can of corn, the olives, and the canned mackerel oil. If you prefer, also use tuna, and then you will have a rich lentil salad with tuna, this is to taste.
  •  Next, wash the cherry tomatoes, dry them on kitchen paper, and cut them into halves.
  • We put them in a salad bowl.
  •  To assemble the salad, add the lentils, the corn, and the slightly shredded mackerel in the same salad bowl. Dress with oil, vinegar, salt, pepper, and ground garlic.
  • We move well to mix the ingredients with the dressing and that’s it.
  •  This lentil and cherry tomato salad is a dish with a fresh and light flavor, ideal for eating during the weekend or serving as a starter. You will see that the mixture of vegetables with mackerel in oil has an exquisite flavor.
