The literal translation of okonomiyaki is “to your liking and grilled”; that is why you will find many ways to prepare it according to the taste and accessibility of the ingredients. Some of the most common ingredients to prepare it are: chives, minced meat, cheese, prawns (shrimp) and octopus, although it admits many others.

Finally, the pizza is served with bulldog sauce or something similar, katsuobushi (dried fish), dried seaweed such as nor, and mayonnaise distributed in the form of a net (this gives it the characteristic touch of the original okonomiyaki). You can make it heavier or lighter depending on whether you want to eat it as a main dish or for dinner.

Ingredients to make Okonomiyaki:

  • 150 grams of cabbage
  • 1 potato
  • 1 egg
  • 100 grams of flour
  • 100 milliliters of fish broth
  • 70 grams of bacon
  • 1 cup of cheese
  • 2 tablespoons tomcats or bulldog sauce
  • 3 tablespoons of mayonnaise
  • 1 splash of soy sauce

How to make Okonomiyaki:

  1. The first step is to cut the cabbage as thin as you can and wash it in a colander under running water for a few seconds. Once it is well drained, leave it in a bowl to mix it with the rest of the ingredients.
  2. Tip: You can buy a package of ready-made shredded cabbage and skip this step.
  3. Wash the potato and remove the skin so you can grate it with the coarser side of your grater.
  4.  Remember not to throw away the potato juice as it will help us integrate the rest of the ingredients.
  5. Add the egg, broth, soy sauce and flour to the bowl.
  6.  If you like to season with pepper you can do it, but in this case we avoid adding salt and pepper to make a lighter version for dinner.
  7. Mix all the ingredients very well with the help of a spoon until you have a thick mixture with pieces.
  8. In the event that you add other ingredients that you like, this is the time to integrate them. You can add shrimp, minced meat, octopus or others.
  9. Divide the mixture in two and add a splash of oil in the pan (if it is non-stick it will not be necessary). Spread the mixture in the pan and cook over medium-low heat. It is important that you choose a pan that has a lid.
  10. Add about 3 pieces of bacon on top of the mixture.
  11. Cook covered for about 5 minutes over medium-low heat.
  12. Once the time has passed, and with the help of a spatula, turn the Japanese pizza over and spread cheese on top.
  13. Once again, cover the pan and cook for 5 minutes on this side.
  14. Remove the okonomiyaki from the pan and garnish with the tomcats sauce (bulldog sauce). Add the mayonnaise in the form of a net, and enjoy!

Tomcats sauce recipe for okonomiyaki

Bulldog sauce or tomcats is a very popular sauce in Japanese cuisine, both for preparation and as an accompaniment to meals. It is an ingredient that you will enjoy having at home, although it is not as easy to get in some countries.

Don’t worry, if you don’t have it, you can prepare a very similar sauce that will be delicious with this Japanese omelet. You will only need to mix:

  • 2 tablespoons of ketchup
  • 1 tablespoon barbecue or barbecue sauce
  • 1 tablespoon oyster sauce or 1/2 tablespoon balsamic vinegar

If you have access to ingredients from Asian cuisine, you can decorate the okonomiyaki with katsuobushi, a very traditional dried and smoked fish.
