Avocado and Orange Salad Recipe

Ingredients to make Avocado and Orange Salad:

  1. 2 Hass avocados
  2. 1 orange
  3. 2 tangerines (optional)
  4. 6 cherry tomatoes
  5. 1 piece of zucchini
  6. 100 grams of mixed green leaves (lettuce, arugula, lamb’s lettuce…)
  7. 60 grams of quinoa (optional)
  8. 1 handful of nuts (pipes, almonds, walnuts…

For the vinaigrette:

  1. 1 orange
  2. ½ lemon
  3. 2 tablespoons Dijon mustard
  4. 1 pinch of pepper
  5. 1 pinch of salt
  6. 1 splash of oil

How to make Avocado Orange Salad:

  • Cook the quinoa in a saucepan with boiling water and a pinch of salt. So that it stays at its point, cook it over low heat for 20 minutes, preferably with the saucepan covered. When it’s ready, drain it, pass it through cold water and reserve it.
  • Tip: remember to wash the quinoa grains before cooking them.
  • Peel the avocados and cut them into slices. To prevent them from browning while you continue to prepare the avocado orange salad, drop a few drops of lemon juice or place the slices on top of raw onion pieces. It is important to buy quality avocados to take advantage of all their properties and enjoy their delicious flavor. In this sense, the Hass avocado variety is one of the best.

  • Cut the cherry tomatoes in half and the zucchini into rather thin slices. If you prefer, you can make the avocado and orange salad with apple, tuna, cod or prawns. The truth is that the possibilities are endless.
  • Tip: you can use more cherry tomatoes.
  • To season the avocado and orange salad, we suggest an orange and mustard vinaigrette. To make it, mix the orange juice with the juice of half a lemon and the rest of the ingredients. Other options that fit with this salad are yogurt sauce and pesto sauce.
