Ingredients to make Beans with Pork Chorizo:
- 1 Kg of sulfur beans
- ¾ kg of lard
- three tortillas
- ½ kg of pork chorizo
- 1 small can of sliced jalapeño peppers
- ¼ cup Nayarit honcho sauce
- ¼ kg of grated dry cheese.
How to make Beans with Pork Chorizo:
- Cook the beans as usual and add salt. When they are cooked, remove all the broth and grind them by hand or with a mill. (Do not blend, it would be like atoll.) In a large container to be able to shake it easily, place the lard to melt. When it is hot, brown the three tortillas until toasted. Remove them and place the chorizo in the fat, stewing it until it is well fried.
- Place the ground beans in the container and stir until integrated. Add the Huizhou sauce and mix. From the can of jalapeño peppers. Let them boil until they yield and that’s it.
- NOTES: To render them, they must be constantly beaten to avoid sticking and burning, the more you shake them, the better the consistency and flavor will be.
