Potato and Beetroot Salad Recipe

Potato and beetroot salad is a traditional dish of Ethiopian cuisine. It is also known by the name eye sir qiqqil and consists of a warm beet or beet salad with potatoes and onions and delicious spicy mustard dressing. Without a doubt, you will love this simple and rich recipe that I bring to you and it will become part of your cookbook.

Ingredients to make Potato and Beet Salad:

  • 1 beet
  • 3 potatoes
  • 1 purple onion
  • 1 tablespoon of mustard
  • 1 tablespoon agave syrup or honey
  • 1 pinch of black pepper
  • 1 small red or chili pepper
  • ½ teaspoon of salt
  • 1 tablespoon of lemon juice
  • ½ teaspoon mustard seeds
  • 1 tablespoon coriander

How to make Potato and Beet Salad:

Cook the beetroot and potatoes until soft.

Trick: You can also prepare them in the oven wrapped in aluminum foil.

Peel the potatoes, beetroot and onion and cut them into small cubes. Prepare the vinaigrette by mixing the mustard, agave syrup or honey, salt, pepper, lemon juice, chili and chopped onion in a bowl. Add the amount of chili that you like the most, if you do not like spicy, add a very small amount. In a bowl mix all the vegetables, add the dressing and mix well. In a hot skillet put the mustard seeds and sauté them until they open. Scatter them over the potato and beet salad along with some fresh coriander and serve.
