Raw Beetroot Salad Recipe

Ingredients to make Raw Beetroot Salad:

  • 3 units of Beetroot
  • 3 units of Carrot
  • 1 unit of celery root
  • 1 Shallot unit
  • 1 apple unit
  • 4 units of Walnuts
  • ½ small glass of Greek yogurt
  • 1 teaspoon grain mustard (optional)
  • 1 package of Mix of greens (lettuce
  • 6 dessert spoons of olive oil
  • 1 pinch of salt and pepper
  • 50 grams of grated Gruyere cheese
  • 1 tablespoon of chopped parsley
  • Bread or croutons grissini

How to make Raw Beetroot Salad:

Cut stem and root from beets; peel and grate into fine threads. Scrape the carrots and grate them too, as well as the celery root. Keep in separate bowls and dress them with a mixture of four tablespoons of oil, lemon juice, parsley, salt and pepper that we will beat well until emulsified. Reserve in the fridge until use. Separately, peel and core the apple.  Cut into small cubes and leave it in a bowl; add two tablespoons of oil, yogurt and chopped nuts. Mix and add grain mustard.

Peel and chop the shallot into julienne strips and add to the previous mixture. Save this mixture in a bowl that serves for the presentation. Wash the salad leaves and spins. Place three leaves in a bowl and fill with the grated vegetables; with the sauce in a bowl in the middle and sprinkle the plate with the cheese. Serve the raw beetroot salad very cold and accompany it with grissini bread.
