Nothing better than a stew on cold days to recompose the body and with this in mind, The steaming stews, tasty and appetizing, are an almost essential first course on the menu. When the first cold weather of autumn brings us closer to the delights of home cooking, we have an infinite variety of foods to prepare these stews, which always have the unique flavor of home.
In this case we opted for white beans and fava beans, seasonal vegetables ideal for making many types of stews.
Ingredients to make Beans with bacon and chorizo:
- 400 grams of white beans
- 150 grams of shelled beans
- 75 grams of Bacon
- 1 unit of Onion
- 1 unit of garlic clove
- 1 bay leaf unit
- 50 grams of Chorizo
- 2 units of Spice Cloves
- 3 tablespoons of olive oil
- 1 teaspoon ground black pepper
- 1 teaspoon salt
How to make Beans with bacon and chorizo:
- Before cooking the legumes, we must soak the beans in cold water the night before.
- On the day of preparation, drain them and put them in a saucepan with the peeled and whole onion, the bay leaf and the two cloves. Cover with cold water and cook uncovered over low heat for 50 minutes or so.
- If you use a pressure cooker to prepare our dish of beans with bacon and chorizo, it will be enough to cook the white beans for 10 minutes.
- When the beans are soft, heat the oil in a frying pan to sauté the very minced garlic, the onion that we have cooked with the beans, the diced bacon and the beans.
- Pour this sauce into the pan where the beans are.
- On the other hand, in a frying pan without oil, add the diced chorizo and sauté for a few minutes to release the fat: Discard the fat and add the chorizo to the pan.
- Season with salt and pepper and cook for another 20 minutes or 10 if we are cooking in a slow cooker.
- The dish of beans with bacon and chorizo should be served hot.
