Vegetables cannot be missing from our diet and preparing soups or creams is a perfect way to take advantage of all their flavor, it is even an ideal way to make the little ones eat more vegetables, especially if among the ingredients we find a little cheese.

To prepare this cream of zucchini and cheese with oats you only need a few ingredients and a lot of desire to enjoy a delicious dish, so let’s get to work!

Ingredients to make Cream of zucchini and cheese with oats:

  • 2 large courgettes
  • 2 tablets of chicken broth
  • 1 liter of water
  • 2 pieces of light cheese
  • 1 branch of chopped parsley
  • 1 pinch of Nutmeg
  • 1 tablespoon of oatmeal

How to make Cream of zucchini and cheese with oats:

  1. Place the water in a pot and cook the courgettes, previously cut into thick slices. Also add the two tablets of concentrated broth and once the water boils, keep cooking for about 10 minutes.
  2. I have used an express pot, but if you prefer you can use a traditional pot and increase the cooking time.
  3. Next, we grind the cooked zucchini together with the chicken broth and add the oatmeal, nutmeg and the light cheeses.
  4. The cream should be homogeneous and with a smooth texture. Once crushed you can give it a touch of heat if you think it is necessary.
  5. Serve and decorate each plate of cream of zucchini and cheese with oats with a little chopped parsley and if you want, add a handful of homemade croutons on top. To enjoy!
