Ingredients to make Carrot Cream from the garden:
- 1kg of carrots
- 1 large onion
- 1 liter of chicken or vegetable broth
- Salt
- Olive oil
- White pepper
- Mashed potatoes.
How to make Cream of Carrots from the Garden:
- Peel and chop the onion. Wash, peel and finely slice the carrots. (If the carrots are fresh, you don’t need to peel them). Heat a couple of tablespoons of olive oil in a pot or pan, add the chopped onion and let it brown well. Incorporate the carrot, stir, and season and let it cook over low heat with the pot covered, stirring from time to time so that it does not stick or burn.
- Add the broth (if you don’t have a concentrated broth tablet and water) and when it starts to boil, lower the heat to a minimum and let it cook for 15 minutes. Remove from the heat and beat with the blender, if you have a potato masher, do it with this tea will be softer and more flavorful.
