  • 1 large broccoli
  • 1 medium zucchini
  • 1 onion
  • 1 piece of Leek
  • 1 Potato (optional)
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of thyme
  • 1 pinch of Cumin
  • 1 pinch of Nutmeg
  • ½ liter of water or vegetable broth

 

How to make Cream of Broccoli and Zucchini:

  1. The first thing we must do to prepare the broccoli and zucchini cream is to prepare the ingredients. Spices are to taste, so you can add or remove from the list. Likewise, the potato provides consistency to the cream, but if you prefer you can remove it from the recipe. That said, we separate the broccoli florets and reserve the central stem to prepare vegetable broth, for example.
  2. Tip: If you don’t have one large broccoli, use two small ones.
  3. Then, we cut the onion into medium pieces, we do the same with the leek, we peel the potato and also chop it, trying to make all the pieces the same size. Wash the zucchini and cut it according to the size of the potato pieces. Now, heat a splash of olive oil in a deep pot and, once hot, fry the onion and leek a little.
  4. It is not necessary to let the ingredients brown, one or two minutes will be enough. After this time, add the zucchini, mix and leave a few more minutes.
  5. Add the broccoli and potato, pour in the water or vegetable broth and cook over high heat until it begins to boil. Once the first boil is reached, sprinkle the spices to taste, stir, lower the temperature to cook the vegetables over low-medium heat, with the pot covered.
  6. When the vegetables are done, we try to see if we have to rectify the flavor with salt or not. Once it is ready, blend with the electric hand mixer until the broccoli, zucchini and potato cream is to our liking. If you want, you can add more water or broth, depending on whether you like the cream more or less liquid.
  7.
