Ingredients to make Tomato Basil Soup:
- 5 units of ripe tomato
- 500 milliliters of chicken broth
- 200 milliliters of milk cream (1 cup)
- 1 cup of white wine
- 1 cup of whole milk
- 1 unit of purple onion
- 2 tablespoons dried basil
- 1 pinch of salt and pepper
How to make Tomato Basil Soup:
- Prelist all the ingredients.
- In a deep pot, add a little sunflower oil and fry the red onion.
- Add salt and pepper to taste.
- Once the onion is transparent, add the basil.
- Let fry for 5 more minutes.
- Wash the tomatoes and remove the base, cut them into four hulls. Reserve them.
- Add the tomatoes to the pot where the onion and the other mixed ingredients are.
- Add the garlic powder.
- Let fry for about 10 more minutes.
- Add the chicken broth and milk.
- Let cook for 20 minutes over medium heat.
- Turn off the heat and let cool.
- Once the soup is cold, add it to a bowl and blend it.
- Using a strainer, sift or strain the soup to obtain a finer consistency and texture.
- Bring the soup to medium heat again and add the white wine.
- Leave for 5 minutes and turn off the heat.
- Serve with a sprinkle of Parmesan cheese on top and a tablespoon or two of heavy cream.
