Ingredients to make Galician traditional chestnut soup:
- 1 glass of olive oil
- 1 ½ kilo of chestnuts
- 2 tablespoons of vinegar
- 1 piece of bacon or pig’s ear
- Salt
- 2 onions
- 1 clove garlic
How to make Galician traditional chestnut soup:
- Peel the chestnuts and boil them in plenty of salted water for a few minutes. Drain and peel.
- Then they are cut in half to put them in another clean water with salt, a whole onion and a clove of garlic.
- Add the piece of bacon or the pig’s ear.
- Leave everything for an hour and a half until the chestnuts are cooked, at which point you fry the chopped onion and oil with a little vinegar, which is added to the broth
