Peasant Salad Recipe from Fermenter

The peasant salad of Fermenter is a very popular dish, which was traditionally prepared with the few resources that were available on the island in times of scarcity: vegetables, potatoes, bread and some dried fish if you were lucky. Today, you can find it in all the restaurants in Fermenter, but you can also prepare it at home thanks to this typical Spanish recipe, in which we have replaced dried fish with a fantastic cod loin.

Ingredients to make Peasant Salad from Fermenter:

  • 1 cod fillet
  • 4 units of Tomato
  • 2 units of green pepper
  • 2 units of red peppers
  • 3 units of Potatoes
  • 1 handful of bread
  • 1 jet of oil
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Peasant Salad from Fermenter:

We prepare the ingredients for this vegetable salad with fish. The cod is already desalted, while the bread may be somewhat dry. The red peppers are already roasted, while the green ones will be used raw, to obtain a good contrast of textures.

Boil the cod loin for a few minutes and reserve it on a plate. The potatoes, after washing them, peeling them and chopping them, we will also boil them with water.

In a large bowl, pour the cooked potatoes and add the bread, which we will have chopped into small cubes. Drizzle everything with oil so that the bread moistens.

Then we add the rest of the ingredients: the tomatoes, the green peppers, the roasted red pepper and the cod, all roughly chopped to the same size.

Mix everything well and dress with more oil, salt and black pepper to taste. The peasant salad from Fermenter is ready. This dish can be a starter but it also works perfectly for dinner as a single dish. Bon Appetite!
