Ingredients to make Broccoli Pesto Pasta Salad:

- 125g short pasta
- 1 unit red tomato
- 100g broccoli
- 15g fresh basil
- 60g parmesan cheese
- 25 g almonds or pine nuts
- 1 garlic clove
- 1 tablespoon balsamic vinegar
- Olive oil
- Salt
- Pepper
How to make Broccoli Pesto Pasta Salad:
Before making this cold pasta salad, the first step is to get all the ingredients ready. Blend the basil leaves, the garlic clove, the almonds and 4 tablespoons of olive oil.
When the mixture is slightly homogeneous, add the Parmesan cheese and two more tablespoons of olive oil, season with salt and pepper and blend until you obtain a thick paste.
Cook the broccoli for 10 minutes in boiling salted water, strain and let cool. Cook the short pasta in boiling water with a teaspoon of salt for 12 minutes until al dente, strain and let cool.
In a bowl, mix the tomato cut into strips without seeds, the broccoli florets, with a splash of balsamic vinegar, salt and pepper. Add the pesto and the cooked pasta; mix all the salad very well.
