Pasta salads are a great alternative not only for summer lunches and dinners but also to take to work and eat healthy, balanced, tasty and cheap!
The truth is that I love preparing salads with pasta, they allow you to have them ready in advance and you can put whatever comes to mind. Today we learn how to prepare it with arcobaleno pasta and bacon. I hope you like it!
Ingredients to make Pasta Salad with Bacon and Cheese:
- 100 grams of Arcobaleno Pasta or Short Pasta
- 1 lettuce
- 100 grams of Gouda cheese
- 150 grams of smoked bacon in cubes
- 200 grams of braised chicken breast
- 1 apple
- 1 handful of sultanas
- 120 milliliters of honey and mustard sauce
- 1 can of corn
- 1 handful of fried onion
- 1 pinch of ground black pepper
How to make Bacon Cheese Pasta Salad:
Before we start preparing our bacon pasta salad, we need to cook the pasta. To do this, boil the paste in a pan covered with water and remove when it is done and firm. Put it in a colander, bathe it with cold water and let it drain. While we cut the lettuce, we wash it very well, we centrifuge it and we reserve it.
On the other hand, we split the bacon and the braised chicken into cubes. We put the bacon in a frying pan over the heat without oil, it will be enough with the fat that it releases and fry until it is golden brown. When it is almost done, add the chicken cubes and a pinch of black pepper, stir and sauté together. Drain any remaining fat and set aside.
Wash the apple and cut it into pieces with the skin. We put it in a large salad bowl. Add the raisins and the diced cheese. We drain the corn and put it too.
We incorporate the bacon and the lettuce chopped by hand, we also add the pasta, which must be very well drained.
We water with the honey and mustard sauce, mix everything very well so that the ingredients are well mixed and reserve cold until serving.
Trick: You can replace the sauce with whatever you fancy or with a dressing with salt, oil and vinegar.
Just before serving our pasta salad with bacon and cheese, we add the handful of fried onion so that it does not soften.
