It is normal that we want to eat lighter in the hottest months that are why we offer you a multitude of healthy salads for all tastes. On this occasion we have prepared an octopus and potato salad accompanied by tomato, spring onion and green pepper.
This summer salad has the benefits of vitamins from vegetables, protein and minerals from octopus, and healthy fiber from potatoes. Do not miss the step by step!
Ingredients to make octopus and potato salad:
- 200 grams of cooked octopus
- 2 potatoes
- 1 piece of spring onion
- 1 tomato
- 1 piece of green pepper
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 splash of white wine vinegar
- 1 jet of olive oil
- 1 pinch of fresh parsley
How to make octopus and potato salad:
We gather all the ingredients to make the octopus and potato salad. If you have left over octopus, you can take the opportunity to prepare some delicious octopus tacos.
First, peel and cook the potatoes in plenty of boiling water with a little salt. So that they take less time to cook, we cut them into pieces. Cooking time is about 10 minutes.
Cut the onion in julienne. If you don’t have spring onion you can use common onion or leek.
Next, we cut the tomato into small segments and place it in a salad bowl. For the octopus and potato salad we have used salad tomato.
Finally, we cut the green pepper into small squares, as indicated in the image. Put all the vegetables in a salad bowl and reserve.

Once the potatoes are cooked, let them cool and add them to the salad bowl. Mix well all the ingredients of the octopus and potato salad.
Season the octopus and potato salad with salt, white wine vinegar, olive oil and chopped parsley.
