This farm bean stew is a very simple dish, but very tasty. Beans, like all legumes, are rich in minerals and nutrients and are an excellent source of vegetable protein, fiber and slow-absorbing carbohydrates. You are going to love this healthy bean stew with tomato and onion! You can eat it alone or better accompany it with a salad or rice with vegetables.

Ingredients to make Bean Stew with Tomato and Onion:

  1. 3 cups of cooked farm beans
  2. 1 onion
  3. 1 can of crushed tomato
  4. 1 bay leaf
  5. 1 pinch of salt
  6. 1 pinch of pepper
  7. 2 cups vegetable broth
  8. 1 tablespoon of oil

How to make Bean Stew with Tomato and Onion:

  • In a saucepan, heat the oil and fry the chopped onion in small pieces until it becomes transparent.
  • Add the crushed tomato to the pot, bring to a boil and cook for 5 minutes, stirring occasionally.
  • Add the beans to the pot and cover them with the broth, season with salt and pepper and add the bay leaf. Cook for 15-20 minutes until the sauce is reduced.
  • Serve the bean stew with tomato and onion accompanied by rice or any other side dish that you like the most.
