Lentil Salad with Salmon Recipe

Ingredients to make Salmon Lentil Salad:

  • 100 grams of arugula
  • 50 grams of Lentils
  • 100 grams of Salmon
  • 1 bay leaf
  • 1 garlic clove
  • 1 unit of Avocado
  • 2 units of Tomato
  • ½ unit of red onion
  • 50 milliliters of Miring or Sweet Rice Wine
  • 50 grams of sugar (¼ cup)
  • 50 milliliters of white vinegar
  • 5 milliliters of soy sauce
  • 5 milliliters of sesame oil
  • 1 pinch of salt and pepper

How to make Salmon Lentil Salad:

Get all the ingredients ready to make this original salad with cooked salmon. Cook the lentils in a pressure cooker with plenty of water, salt, onion trimmings, the macerated garlic, coriander stems and the bay leaf. Cook for 10 minutes until slightly softened. Drain and let cool.

Separately, cut the onion into feathers and place them in salted water for 10 minutes. With this process we make sure to reduce its characteristic strong flavor a little.

Cut the tomato into small cubes, strip the arugula and mix all this in a bowl with the onion, previously drained. Stir these ingredients well and add a little salt and pepper.

Next, add the cold lentils and stir carefully so as not to mistreat them. Reserve in the fridge until serving time.

To dress the salad we will make a reduction of miring. So, in a pot we are going to add the miring together with the sugar and the vinegar. Let cook over medium heat until you get jelly consistency. Remove from heat and add a pinch of sesame oil and soy sauce. Let it sit at room temperature until cool.

To finish with the fresh lentil salad we have to cook the salmon. To do this, cut the fish into small pieces, season with salt and pepper and cook in a hot pan for 1 minute on each side.

To serve the fresh salad with cooked salmon, place a portion of the lentil mixture in the center of the plate, surround it with the sliced ​​avocado and salmon pieces, and finish with a drizzle of the miring reduction. As you can see, the lentil salad with salmon is an exquisite and very original gourmet dish.
