Ingredients to make Avocado Lentil Salad:
- 200 grams of lentils
- 1 chicken breast
- 1 avocado
- 1 white onion
- 1 bunch of green lettuce
- 2 lemons
How to make Avocado Lentil Salad:
To start making the lentil salad with avocado recipe, you must first soak the lentils a few hours before or, if you wish, overnight. Then remove the water and take this ingredient to a deep pot adding new water, thyme and salt. Cook for about 20-30 minutes over medium heat, remove and let cool.
While the lentils are cooking, we are going to disinfect the lettuce. To do it, we take it to a bowl and add enough water, add the juice of a lemon or a little white vinegar. Let soak for ten minutes, remove the water and drain the lettuce very well. Cook the chicken and add a little salt and pepper to taste.
Take a skillet over medium heat and add a little olive oil, add the chicken breast and cook on each side. Once cooked, remove from heat and let cool. In a separate bowl, add the lettuce in small pieces with the white onion in feathers.
Add the shredded chicken breast as seen in the photo to our healthy lentil salad. Make a dressing to dress the salad. Add the lemon juice, salt, pepper and a little olive oil.
Add the cooked lentils and the avocado in medium squares to the bowl. Mix very well until all the ingredients are incorporated. Add any aromatic herb you want to the dressing, in this case we have incorporated some basil leaves to further aromatize our preparation. If you prefer, you can prepare orange vinaigrette.
Add the dressing to the cold salad and mix the ingredients well, we are ready to serve the recipe. Serve the lentil salad adding any seed you want, it can be sesame or sesame, chia or amaranth, and consume this fresh salad accompanied by grilled salmon.
