Ingredients to make Lentil and Quinoa Salad:

  • 100 grams of quinoa
  • 100 grams of lenses
  • 1 red tomato
  • 1 avocado
  • 1 slice of mozzarella cheese
  • 1 garlic clove
  • Olive oil
  • Balsamic vinegar

How to make Lentil and Quinoa Salad:

Put the lentils in a pot with boiling water and cook them with a pinch of salt for about 20 minutes until the grain is al dente.

Boil water in another pot and add the previously macerated garlic. Add the quinoa and let it cook for 15 minutes until it opens.

In the same bowl, add the cooked lentils and quinoa. Mix and season with salt and pepper. Peel and cut the tomato into small cubes without seeds, do the same with the avocado. Add the ingredients to the quinoa and lentil salad, mix.

Add the cheese cut into strips, the olive oil and the balsamic vinegar to taste. Season with salt if necessary and enjoy your lentil and quinoa salad.
