Ingredients to make Sweet Potato Celery Soup:
- 500 grams of Celery
- 100 grams of wheat flour
- 2 teaspoons of dried oregano
- 1 unit of red onion
- 3 units of Creole sweet potato
- 1 tablespoon of butter
- 1 cup of white wine
- 300 milliliters of chicken broth
- 2 teaspoons of garlic powder
- 1 pinch of salt and pepper
How to make Sweet Potato Celery Soup:
- Pre-list all the ingredients to prepare the vegetable soup.
- Cut the onion into small squares, in a deep pot over medium heat add a splash of sunflower oil and fry until transparent.
- Once the onion is transparent, add the celery and flour.
- Let fry for 10 minutes.
- Add the chicken broth, garlic, oregano, salt and pepper and the potato cut into small squares (so that it dissolves in the soup).
- Let the soup cook for 20 or 25 minutes.
- Turn off the heat and add the white wine and butter.
- Let the sweet potato and celery soup cool.
- Once the soup is warm or cold, process with a mixer or in a blender.
- Strain the soup to obtain a fine-textured dish.
- Serve the celery and potato soup with a tablespoon of heavy cream and dried oregano sprinkled on top. Enjoy.
