Ingredients to make Creamy Spinach Soup:

  • 1 cup of spinach leaves
  • ½ cup of chicken broth
  • 1/3 chopped onion
  • ½ large potato, peeled and chopped
  • 1 cup of water
  • 1 clove garlic
  • ¼ cup of milk
  • 1 teaspoon of butter
  • Salt
  • pepper to taste

How to make Creamy Spinach Soup:

  1. Place the potato, onion, garlic, water and chicken broth in a pot, bringing them to a boil over medium heat.
  2. Cook until the potato falls apart.
  3. Add salt and pepper to your liking.
  4. Sauté spinach with a touch of olive oil.
  5. Blend everything with the milk and the teaspoon of butter.
  6. Return soup to saucepan, cook until boiling, stirring constantly, and serve hot.
