Ingredients to make Sarmorejo:
- 1 kilo of bread from the day before
- 1 glass of olive oil
- 3/4 kilo of ripe tomatoes
- 2 cloves of garlic
- 1 glass of wine vinegar
- Salt to taste
How to make Sarmorejo:
- Remove the crumb from the bread, soak it in water and when it is well soaked, remove it and squeeze it well.
- The classic way to do it is in a mortar or dornillo (a kind of wooden mortar) and if you want to do it that way, first place the salt in the mortar, then the peeled garlic.
- Go mashing with the mace so that the garlic breaks up well, then add the tomatoes, cut into cubes and continue mashing, add the bread and the vinegar.
- Without stopping to mash, add the oil little by little until you get a good mixture, then pass it through the food mill (Chinese).
- If, on the other hand, you opt for the most modern way, put the oil, the bread, the tomatoes, the peeled garlic, the vinegar and the salt in the blender glass.
- Beat for a few minutes, until you get a homogeneous mixture. Pass through the food mill, to remove the skins and seeds of the tomato.
- Add very cold water until you get the desired texture and adjust salt.
