Zucchini and potato cream recipe

Ingredients to make Zucchini and Potato Cream:

  • 1 medium potato
  • 2 leeks
  • 1 piece of pumpkin
  • 1 medium zucchini
  • 1 jet of olive oil
  • 1 pinch of salt
  • 2 little cheeses

How to make Zucchini and Potato Cream:

  1. The first step to make this zucchini and potato cream is to peel all the vegetables: we have to remove the skin and wash the potato, the leeks, the squash and the zucchini.
  2. Then we place all the vegetables in a pot with a splash of olive oil and cook them in boiling water until we see that they are tender (approximately 20 minutes.
  3. After that time, strain the vegetables and save the cooking water in case we need it when blending the cream.
  4. Then we grind the vegetables with the cheeses and a splash of oil, and if we see that it is too thick, we can add a little of the cooking water from the vegetables until we obtain the desired texture.
  5. ET voila! We already have our zucchini and potato cream ready in a very short time. You can decorate it with croutons and it will be even richer.
