Ingredients to make Fresh Endive Salad:
• 150 ml of extra virgin olive oil
• 4 puts
• 8 dried figs
• 50 ml of Modena vinegar
• 75g walnuts
• 1 lime
• 4 oranges
• Ground black pepper
• Malden jump
How to make Fresh Endive Salad:
First, in a bowl, prepare vinaigrette. We squeeze the lime and add to the bowl, add the vinegar, the oil and mix well.
Remove the endive leaves one by one and wash them well, dry them with a clean kitchen cloth. Next we are placing the leaves in a source.
Then we cut the figs into thin slices, 2 per person, peel the oranges and cut them into small pieces. On top of each endive leaf we put a slice of fig and in the middle the orange. Then sprinkle the walnuts on top.
Season with the citrus vinaigrette and season with a few Malden salt crystals.
