  1. 3 units of Zucchini

  7. 1 handful of basmati rice
  8. 1 unit of Onion
  9. 2 tablespoons of olive oil

How to make Zucchini Cream with Rice:

  • We gather all the ingredients to prepare the zucchini cream with rice.
  • First, fry the onion in not very thin slices with a little olive oil. Let it cook over medium heat for 3 minutes.
  • Next, add the peeled and sliced ​​courgettes. If you feel like it, you can leave a little of the skin, well washed, so that it gives more color to the cream. Season with salt and pepper and cook for 5 minutes.
  • On the other hand, we cook the basmati rice in a pot with plenty of boiling water. The amount of rice depends on your taste but normally a small handful is added for each person (about 1 and a half tablespoons). The cooking time will depend on the manufacturer’s instructions. Once cooked, strain and reserve.
  • Add the zest of a lemon to the zucchini. Remove and add 2 teaspoons of lemon juice.
  • It is time to incorporate the turmeric. With just a pinch, the cream takes on a very exotic flavor and also gives it a beautiful color. We remove well.
  • Cover the courgettes with water or vegetable broth and cook for 10-13 minutes over medium-high heat. If you want them to cook before you can cover the pot.
  • We beat the zucchini cream with the help of a blender and if necessary we rectify salt. It is necessary to beat until there is a fine cream, if necessary add a little more water or vegetable broth.
