Ingredients to make Watercress Cream:
- 150 grams of watercress
- 500 grams of Potatoes
- 1 unit of Leek
- Olive oil
- Nutmeg
- Salt
- 1 liter of vegetable broth

How to make Watercress Cream:
- The first thing we do to make this easy watercress cream is to get all the ingredients ready.
- Wash the leek and cut it into not very large pieces, as shown in the photograph. Then, in a saucepan with a bottom of hot oil, we fry it for 3 or 4 minutes. We also peel the potatoes, cut them and add them to the sauce after this time.
- Let the potatoes cook with the leek for 10 minutes over medium heat and add the vegetable broth. Let it cook until the potato is well done, it may take us approximately 15 minutes.
- When it is ready, remove the pan from the heat and add the previously washed and drained watercress. We mix everything and beat it with a blender until we obtain a smooth and homogeneous cream. You can also use a blender.
- If we want, we can add a little liquid cream to clarify the watercress soup and continue beating. This cream is ideal to take it hot during cold times and cope with low temperatures, or cold and cool off on a hot day.
- When it is ready, we serve the watercress cream with grated nutmeg on top and garnish with pieces of fried bread. To make the dish more presentable, we can add a couple of watercress leaves
