Ingredients to make Rustic Cauliflower Soup:
- 1 bunch of cauliflower.
- 3 garlic cloves.
- 2 branches of long onion or green onion.
- 3 tablespoons olive oil.
- 2 cups of whole milk.
- Salt of fine herbs (mixture of laurel, thyme and dried oregano).
How to make Rustic Cauliflower Soup:
- Prelist all the ingredients.
- Cut the long or green onion into thin pieces.
- In a deep pot add the long onion or green onion and sauté it
- Cook the cauliflower in boiling water until it is soft, once cooked, remove from the heat and cut with the knife as thin as possible.
- Add the chopped cauliflower to the pot where we have the long or green onion and add the herb salt, leave to preserve for approximately ten minutes.
- Add the milk and bring to a boil. Leave to keep for about 5 to 10 minutes. With a hand whisk, mix until all the ingredients are dissolved.
- Serve the rustic soup with a splash of olive oil on top.
