Dare to prepare this delicious and easy cod roe salad with turmeric mayonnaise and rye bread that I have shared. The eggs of marine animals, fish, shellfish, sea urchins, etc. are actually the concentration of the egg lying of the species in question.
They are used in kitchen dishes in multiple ways, they are in most cases easy to get, and also quite cheap. There is also some of a high cost value such as the famous sturgeon caviar.
In the market it is common on certain dates to find fresh roe that are rich in phosphorus, vitamin E and vitamin B12, provide a good amount of protein and are low in calories. Widely used as tapas in the southern part of Spain, seasoned with sour fruits (sour or bittersweet fruits).
Ingredients to make cod roe salad:
- 250 grams of cod roe
- 1 liter of water
- 2 tablespoons of salt
- 1 bag of salad mix
- 300 grams of celeriac
- 2 carrots
- 1 small red onion
- 2 sticks of celery
- A few leaves of lettuce buds
- 8 slices of rye bread
- 50 grams of flour
- ½ teaspoon sea salt
- olive oil for dressing
For the turmeric mayonnaise:
- 120 milliliters of olive oil
- 4 tablespoons of lemon juice
- 1 teaspoon of sugar
- 1 teaspoon of turmeric
- ½ teaspoon of salt
- 1 pinch of ground black pepper
- 1 egg
How to make Cod Roe Salad:
We put the water to boil, wrap the roe with plastic wrap as if they were candy and let them boil for about 8 minutes, remove them from the water and reserve them. Cut the celery, carrot and celeriac into thin slices and boil them for 3 minutes in salted water, drain them and let them cool.
Cut the red onion into slices. Put the salad mix with all the other vegetables in a salad bowl. We remove the plastic paper from the cooked cod roe and cut them into slices approximately one centimeter thick, coat them in flour and fry them in a pan with a little oil until they are golden brown.
We heat the oven and put the slices of rye bread painted with oil and a little salt and leave them until they get crispy.
To prepare the turmeric mayonnaise we put all the relevant ingredients in the blender glass and beat as for a normal mayonnaise sauce.
To the vegetable mixture we add the fried cod roe and the turmeric mayonnaise. And now we can enjoy this rich fish roe salad at the table.
