Follow and learn how to make an Austrian bean stew with companion, a delicious dish of beans with a mixture of meats and sausages that you won’t be able to resist.
Ingredients to make Austrian Facade with companion:
- 1 kilogram of beans
- 3 sausages
- 2 blood sausages
- 250 grams of Bacon
- ½ onion
- 1 clove garlic
- 1 pinch of saffron
- 1 pinch of Paprika or Paprika
- 1 pinch of salt
How to make Austrian Facade with companion:
- Get all the ingredients ready to prepare the Austrian beans.
- As it is a traditional recipe, it is important that you bear in mind that the quality of the ingredients is very important, so the chorizo must be the typical Austrian smoked red chorizo, but if you don’t have any, you can use any other, as in my case, which I have used chorizo creole. Keep this in mind when choosing beans, white or pinto beans are the best.
- As in the preparation of any other type of grain, the beans must be soaked overnight. After that time, take the beans to a pot with plenty of water, the chopped onion and the garlic.
- There are people who differ when it comes to adding garlic and onion, if you have good beans it will not be necessary, but we leave it to your choice.
- Add all the meat, cover the pot and cook over low heat for 1 hour.
- After that time, remove the foam that forms on top.
- After removing the foam, continue cooking the beans for 1 more hour and after this time, season with the condiments on the list to taste.
- After seasoning, you must keep the pot on the fire for another hour and then remove all the meat: the bacon, the chorizo, the bacon and reserve the companion separately.
- Discard the onion and garlic. Increase the heat and reduce the liquid by half or until the beans are as thick as you like.
- Serve the Austrian bean stew with companion and bon appetite! Adapt this recipe to your liking and add more or fewer ingredients, such as vegetables, as is done in the recipe for beans with potatoes and chorizo.
