Garlic soup recipe – Traditional recipe

If there is a classic soup recipe in our country, it is, without a doubt, the garlic soup. This dish is prepared with humble ingredients such as garlic and stale bread, and yet it has a delicious flavor that will not leave anyone indifferent. In this article, I teach you how to prepare it step by step so that you can bring a hot dish to your table any day of this cold winter and, incidentally, take advantage of the leftover stale bread that we don’t always know what to do with.

Ingredients to make Garlic Soup – Traditional Recipe:

  • 1250 milliliters of water
  • 120 grams of stale bread
  • 1 head of garlic
  • 1 teaspoon sweet smoked paprika
  • 1 splash of extra virgin olive oil
  • 2 eggs

How to make Garlic Soup – Traditional Recipe:

  1. We put water to heat in a saucepan. Meanwhile, peel and cut the garlic into thick slices.
  2. In a large frying pan, add a splash of olive oil and when it is hot, sauté the garlic. Stir occasionally until golden brown. We remove from the fire.
  3. Tip: Be careful when frying the garlic, it burns quickly!
  4. Cut the bread into pieces and reserve. In the pan that we just removed from the heat, add a generous teaspoon of smoked paprika, stir well and return to the heat to continue with the traditional garlic soup recipe.
  5. Add the bread that we have broken and stir well so that it is impregnated with the paprika, the oil and the garlic.
  6. When the water starts to boil, pour the contents of the pan, stir well and add salt. Cover and let the garlic soup cook for about 15 or 20 minutes.
  7. We beat the eggs as if we wanted to make an omelet and add them to the pan stirring. In less than a minute they will be curdled, so we turn off and serve.
