Chickpea Noodle Soup Recipe

Ingredients to make Chickpea Noodle Soup:

  • 1 chicken carcass
  • 1 small onion
  • 2 cloves of garlic
  • 6 black peppercorns
  • 1 can of cooked chickpeas (400 grams)
  • 60 grams of angel hair noodles
  • 1 pinch of salt
  • 1 teaspoon meat concentrate
  • 2 eggs

How to make Chickpea Noodle Soup:

  1. We start by peeling the onion and cutting it into quarters. We also peel the garlic cloves.
  2. Place the onion and garlic in a large saucepan along with the chicken carcass and the peppercorns. Cover with water and put on the fire. When the mixture starts to boil, leave it for about 25-30 minutes.
  3. Meanwhile, put the eggs in a saucepan and cover them with water. We put them on the fire and when they come to a boil we cook them for 10 minutes. Remove from heat, strain and cover with cold water. After a few minutes, peel, chop and reserve.
  4. Next, remove the chicken carcass from the pan and strain the homemade broth. We also discard the pepper, onion and garlic. Put the strained broth in another clean pan. We open the chickpeas, drain them, wash them well to remove the liquid that preserves them and add them to the broth.
  5. We put the pot on the fire and add a teaspoon of meat concentrate and rectify the salt to our liking. Let the soup with pot chickpeas boil for about 10 minutes.
  6. Add the pasta, stir well and cook the canned chickpeas with noodles until they are soft. Being so thin they will take a few minutes.
  7. We serve the chickpea noodle soup in plates or bowls and put the chopped egg on top before taking it to the table. Bon Appetite!
